Emily - 6 months!!


You've got to be kidding me...

You're already 6 months old?!  That's half of a year, Emmy!  Time is already flying.  You're growing to be the cutest, sweetest, funniest baby I could've ever asked for.  Sure, at times you show quite well how spoiled you are...lol...but during other times, I wish I could stay in that moment forever because you are so sweet.



This month you:

Had your first St. Patrick's Day
Celebrated your first Easter
Flew 4 more times to go be with family in NC after Papaw's passing...he loved you very much!
Started sitting up by yourself most of the time! (Sometimes you unexpectedly fall over so we still have to stay close by!)
Ate baby oatmeal, mashed bananas, and had sweet potatoes ONE and ONLY ONE time - you were up alll night with the worst gas ever.
Got at least 3 sips of sweet tea...this was definitely against my rules, but someone, ...cough, cough, Grandpa...didn't care.
Are teething so bad!  I don't see or feel any teeth yet, but you're drooling like crazy, chewing on everything and then screaming, and you love chewing on cold or textured objects. 
Laughed so hard when Daddy pretended to be sleeping/snoring and then he woke up really fast.
Got to pet a real bunny!
Said "mamama" 3 times and also started saying other new sounds...but no "dada" yet...mwahahaha!
Can pick up your paci and put it in your mouth by yourself
Got in a real swing for the first time and you loved it!
Have perfected your "diva scream" when you don't get your way
Are still growing like a weed...and your cheeks are unstoppable
Love to practice standing up/walking with our help
Put both hands on my face and pull my chin, cheek, nose, etc. into your mouth to suck on
Are still best friends with Katie...you two love to love on each other :)



You've been learning so many things that I'm afraid I've left something off the list!  I am so proud of you already, my smart little girl!

Emily - 5 Months

My baby girl is 5 months old today!  And just look at ya -

You have grown soooo much!

This morning, I tried to get a cute photo of you at the bowling alley...


You were not impressed.  And then...


You got so tired from your morning of fun that you ended up passing out right there on the bowling alley couch.


You sure give us a lot of smiles, laughs, and wonderful memories!

This month you:

Had your first Valentine's Day  <3
Made your first craft - footprint heart Valentine cards for your family
Started shrieking at the top of your lungs, making funny lip noises, and breathing in & out really hard when you get excited.
Improved your motor & coordination skills - you are now able to reach out and pull musical toys.
Got sick for the first time with an upper respiratory infection.  :'(   But you were still happy and we wouldn't have even known you were sick were it not for the sound of congestion I heard when you breathed.
Pulled my hair allllll the time - OUCH!  (and sometimes my earrings, too!)
Saw a BLIZZARD!  The last snow you felt/saw was tiny compared to this one.  Of course you're still little and you were also sick, so I didn't take you out in the snow, but I let you look outside at it from the open door while you were bundled up.  : )
Started sleeping face down with your little booty straight up in the air.  I sing to you "Booty in the sky, booty in the sky"  haha
Became BFF's with Katie - you reach out for her when she's near, pet her fur, and touch her wet nose.  She loves to lick your hands and feet, which always makes you smile and giggle.
Became more attached to me - there was one time you started crying when someone else held you because you wanted me to hold you.
Cry when we lay you down upstairs in the early evening - but when I show you a diaper and tell you it's only to change your diaper, you smile really big and stop crying...you are so smart!!
Started getting a bit...uhhh...bigger...haha.  You used to only wear clothes that were true to your size until this month.
Started blowing raspberries on my neck and arms!  heehee


I love you so much, my sweet Emmy Grace!   Can't wait to see what next month brings!

Emily - 4 Months


Guess what Emmy? 

What Mom?


You're 4 months old today!
Get outta town!!!
Guess what else?  To celebrate, we're going shopping at the mall!
HOORAY!!!!!
 
Haha.  You are so much fun, Emily, with all your silly expressions.  Go on and read what other fun you've had this month.


This month you:

Tried your first bite of baby oatmeal - and hated it
Started going to Cait while Mommy had to go back to work - you love going there!
Started rolling over!
Sat through your first Superbowl - (the Ravens won)
Started picking up and shaking toys
Loved sleeping on your side - you roll that way on your own
Are making tons of funny noises! (shrieks, squeals, etc.)
Smiled at Katie
Made a loud "AAAAAHHH" noise every time we blow a raspberry on your stomach
Are drooling like it's your job
Loved trying to stand up on Mommy's lap
Started bringing toys to your mouth
Went to the mall for the 1st time - and loved it  (today!)
Laughed for the first time!!!  (today! - and at what? you may ask...it was after getting a dry diaper, because of course that is soooo funny, lol)


Keep being your funny, cute, and sweet self, Emmy.  I think you're the most wonderful baby in the world!

Emily - 3 Months



Sweet baby girl, you are 3 months old now!!!  My arms can sure tell a difference from carrying your ever-increasing weight around.  ;) 

This has probably been your most eventful month yet!  This month you:

Began sleeping through the night (1st time was 12/11 - Mommy & Daddy's anniversary!)
Went on FOUR airplane rides!!
Set foot in 2 new places - Chicago, IL and NC
Met TONS of family and friends in NC
Had your very first Christmas!  Yay!
Had your very first New Years Eve - you did not stay up to watch the ball drop, but we kissed ya anyways!  ;)
Saw snow for the first time...you even touched it in Mommy's hand!
Started smiling at yourself in the mirror
Loved making sounds at us, especially the "k" sound
Started blowing spit bubbles and drooling like crazy!
Started trying to sit up with help (us pulling on your hands)
Smiled so big mostly every time you saw Mommy or Daddy   :)


I love you SO much, my Emmy girl.  :)  I can't imagine my life without you in it.  Can't wait to see what next month brings!

White Chocolate Cranberry Cheesecake Bars



Happy New Years Eve, everyone!  It's crazy how fast this year has flown.  I guess it has for me because the whole year was centered around my journey being pregnant and then having my beautiful baby. 

I hope you all had a wonderful Christmas, as well.  We were fortunate enough to be able to go to NC and be with our families for Christmas.  We had so much fun, and Emily got to meet lots of new family members.  These bars are a favorite of my great Aunt Gale's, among other family members.  I knew she would be at our Christmas Eve gathering so I decided to make them as a surprise.  These bars are not too sweet. They have more of a tangy flavor from the cranberries and the cheesecake layers. 

I hope you all have a great time bringing in the new year.  I will be at home with my husband and daughter, enjoying the beautiful snowfall and dancing my butt off to "Just Dance 4".   :)


White Chocolate Cranberry Cheesecake Bars

2 cups all-purpose flour
1 (14 ounce) can NESTLE® CARNATION® Sweetened Condensed Milk

Preheat oven to 350 degrees F. Grease 13 x 9-inch baking pan.
Combine flour, oats and brown sugar in large bowl. Add butter; mix until crumbly. Stir in morsels. Reserve 2 1/2 cups morsel mixture for topping. With floured fingers, press remaining mixture into prepared pan.
Beat cream cheese in large mixer bowl until creamy. Add sweetened condensed milk, lemon juice and vanilla extract; mix until smooth. Pour over crust. Combine cranberry sauce and cornstarch in medium bowl. Spoon over cream cheese mixture. Sprinkle reserved morsel mixture over cranberry mixture.
Bake for 35 to 40 minutes or until center is set. Cool completely in pan. Cover; refrigerate until serving time (up to 1 day). Cut into bars.

Hot Chocolate Krispie Treats



Yesterday, we got the first professional pictures of Emily taken.  I CANNOT WAIT to see them!  I saw a few of the photos on the photographer's camera and I'm already in love.  She captured just what I wanted for Christmas pictures, which was having Christmas tree lights glowing behind Emily.  I know everyone thinks their baby is the cutest baby in the world, and I am certainly no different.  Emily was definitely the most adorable thing I've ever seen in her Christmas tutu dress!

As we changed her and went to her room to take pictures there, she started getting reallllly cranky.  Despite many measures taken, she cried through most of that part of the shoot.  I was sad because I really wanted her sweet smile captured (we may have gotten one from the side).  However, I couldn't get too upset, because I recalled my mom telling me a story of how I did the exact same thing when I was a baby.  Payback!! 

She fell asleep at the end of the shoot and took a long afternoon nap.  That was good for me, because I needed to make these Hot Chocolate Krispie treats for the Christmas dinner at our church.  These are a fun, delicious spin on the ol' classic rice krispie treat. 

I'm going to post this blog and then walk by the computer and check Facebook every 2 minutes like a crazy woman waiting for a sneak peek of one of our pictures to be posted.  :)



Hot Chocolate Krispie Treats
Source: adapted from Cookies & Cups

12 cups cocoa krispies
1/2 cup butter
8 cups of mini marshmallows, plus 4 cups for later
3/4 cup hot chocolate mix
cooking spray
sheet of parchment or wax paper- optional
 
Spray 9x13 pan with cooking spray.  Set aside.
Melt butter in large saucepan over low heat.  When butter is melted add the 8 cups of mini marshmallows.  Stir while continuing to cook over low heat until marshmallows are melted and then add hot chocolate powder.  Stir until it is all mixed in.  Remove from heat.
Add in your 12 cups Cocoa Krispies.  Stir until mixed well.
Now add in 4 cups mini marshmallows.  Stir until marshmallows are evenly distributed throughout the krispie mixture.  Pour into prepared pan.
Lightly spray a piece of parchment or wax paper with cooking spray for an easy way to press mixture into pan without it sticking.  If you don't have wax or parchment paper just press evenly into pan with the back of a spoon sprayed with cooking spray.
Let cool for 30 minutes and cut into squares.  Store air tight for up to 2 days.

Anniversary & No Bake Nutella Cheesecake

Today marks my 2nd anniversary with my handsome hubby.

To celebrate, I made a special dinner for the two of us tonight.  Including this yummy dessert:

No-Bake Nutella Cheesecake

Crust:

12 Oreo Cookies, crushed into crumbs
3 tablespoons unsalted butter, melted

Filling:

1 (8 ounce) package cream cheese, softened
2/3 cup Nutella
1 teaspoon pure vanilla extract
1 (8 ounce) tub frozen whipped topping, thawed

Garnish:

whipped topping, optional
chocolate shavings, optional
toasted, chopped hazelnuts, optional

Directions:
In a medium bowl, stir together the Oreo cookie crumbs and melted butter. Evenly divide the crumbs between your individual serving dishes and press into the bottoms of the dishes to form a crust layer.
In a large bowl, with an electric mixer, beat the cream cheese and Nutella until smooth. Add vanilla and mix to combine. Using a rubber spatula, fold in the whipped topping until well blended and no streaks remain.
Evenly pipe or spoon the filling into individual serving dishes. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
If desired, garnish with additional whipped topping, chocolate shavings, and/or toasted, chopped hazelnuts.
